Birthday Cake Protein Balls (No Bake, Funfetti Style)
Ingredients
- 1 cup almond flour
- 1/2 cup vanilla whey or casein protein powder (sweetened)
- 2 tbsp coconut flour
- 1/4 tsp salt
- 2 tbsp rainbow sprinkles (plus extra for topping)
- 1/4 cup maple syrup
- 2 tbsp almond butter
- 1 tsp vanilla extract
- 2-3 tbsp milk of choice (as needed for texture)
Instructions
- In a large bowl, whisk together almond flour, protein powder, coconut flour, and salt.
- Add almond butter, maple syrup, vanilla extract, and mix until mostly combined.
- Stir in sprinkles, then add 1 tbsp milk at a time until a soft dough forms.
- Roll into 12 balls (about 1 tbsp each).
- Optional: press extra sprinkles on top.
- Chill in fridge for 15–30 minutes to firm up before eating.
