Birthday Cake Protein Balls (No Bake, Funfetti Style)
High-protein cake batter bites with rainbow sprinkles, no baking required. Made with vanilla protein, almond flour, and maple syrup for a soft, chewy texture that hits the birthday cake craving.
1/2cupvanilla whey or casein protein powder (sweetened)
2tbspcoconut flour
1/4tspsalt
2tbsprainbow sprinkles (plus extra for topping)
1/4cupmaple syrup
2tbspalmond butter
1tspvanilla extract
2-3tbspmilk of choice (as needed for texture)
Instructions
In a large bowl, whisk together almond flour, protein powder, coconut flour, and salt.
Add almond butter, maple syrup, vanilla extract, and mix until mostly combined.
Stir in sprinkles, then add 1 tbsp milk at a time until a soft dough forms.
Roll into 12 balls (about 1 tbsp each).
Optional: press extra sprinkles on top.
Chill in fridge for 15–30 minutes to firm up before eating.
Notes
Pro Tip: If the dough feels too sticky, add a touch more coconut flour. Too dry? Add a splash of milk. You can also swap almond butter with cashew butter for a lighter “vanilla frosting” vibe.
