Birthday Cake Protein Balls (No Bake, Funfetti Style)

High-protein cake batter bites with rainbow sprinkles, no baking required. Made with vanilla protein, almond flour, and maple syrup for a soft, chewy texture that hits the birthday cake craving.

Ingredients
  

  • 1 cup almond flour
  • 1/2 cup vanilla whey or casein protein powder (sweetened)
  • 2 tbsp coconut flour
  • 1/4 tsp salt
  • 2 tbsp rainbow sprinkles (plus extra for topping)
  • 1/4 cup maple syrup
  • 2 tbsp almond butter
  • 1 tsp vanilla extract
  • 2-3 tbsp milk of choice (as needed for texture)

Instructions
 

  • In a large bowl, whisk together almond flour, protein powder, coconut flour, and salt.
  • Add almond butter, maple syrup, vanilla extract, and mix until mostly combined.
  • Stir in sprinkles, then add 1 tbsp milk at a time until a soft dough forms.
  • Roll into 12 balls (about 1 tbsp each).
  • Optional: press extra sprinkles on top.
  • Chill in fridge for 15–30 minutes to firm up before eating.

Notes

Pro Tip: If the dough feels too sticky, add a touch more coconut flour. Too dry? Add a splash of milk. You can also swap almond butter with cashew butter for a lighter “vanilla frosting” vibe.
